The seviche, the anticuchos, the tamales and the mazamorra in the Traditions of Ricardo Palma

This research work refers to the information offered by Don Ricardo Palma, in his Traditions, on four emblematic dishes of Peruvian cuisine: the seviche, the anticuchos, and the tamales, as well as the sweet mazamorra. The name of the tradition in which each reference appears is indicated, and data offered by other authors of long ago are added. Also, to rescue the old recipes for preparing the dishes mentioned, we include these, which we have taken from authors of the nineteenth and early twentieth centuries.
